Beef Tikka Masala [ Indian-influence ]

Ingredients: beef stew, carrots, peas, coriander, cumin, turmeric, cinnamon, ginger, black pepper, cayenne, cardamom, salt, garlic, cilantro, onion, tomato sauce, cream, yogurt, and sour cream.

Directions: It is a beef stew with carrots and peas. I like to mix my spices for that particular dish to include but not limited to: coriander, cumin, turmeric, cinnamon, ginger, black pepper, cayenne or Aleppo pepper or red pepper flakes, a bit of cardamom, salt and pepper, garlic, cilantro, onion, tomato sauce and a bit of cream rounds it up or at service, a dollop of yogurt or sour cream can be added and given a touch of a swirl.

Buca Di Beppo (“Saltimbocca”) Chicken [ Italian-influence ]

Ingredients: chicken, heavy cream, white wine, ham prosciutto, artichoke hearts, and capers.

Directions: Chicken pan-seared then finished in heavy cream, and white wine sauce with ham prosciutto, artichoke hearts, and capers.
