Beef Rouladen [ German-influence ]

Ingredients: beef, onion, bacon, pickle, red wine, tomato sauce, mashed potatoes, parmesan, garlic, parsley, broccoli, lemon, and butter.

Directions: Thinly sliced Top Round beef, pounded to create large circles. Roll with a filling of caramelized onion, cooked bacon, and sliced pickles. Secure the beef rolls with a toothpick. Pan sear then simmer in a red wine, mustard, beef stock and tomato sauce.

Grouper Fillet “en papillote” [ French-influence ]

Ingredients: grouper filet, bell pepper, mushroom, tomato, onion, herb, Sherry Vinegar, potatoes, parmesan, garlic, parsley, and vegetables.

Directions: A baked grouper filet topped with sautéed bell pepper, mushroom, roasted tomato onion, and herbs and finished with a dash of Sherry Vinegar. “En papillote” means baked in a pocket made with baking paper.

Penne Pasta, with Vegetables in Tomato Sauce and Cheese [Italian influence]

Ingredients: penne, zucchini, yellow squash, mushroom, bell pepper, tomato sauce, Italian herbs, cheddar, and parmesan cheese.

Directions: Penne baked pasta with layers of vegetables (zucchini, yellow squash, mushroom, bell pepper), cooked in roasted tomato sauce with Italian herbs. Topped with cheddar and parmesan cheese. Served with a side of in-house dinner rolls.
