Pork Tenderloin on Golden [ Italian-influence ]

Ingredients: Pork tenderloin medallions, white wine, prosciutto, sage, and butter.

Directions: Pork tenderloin medallions with a sauce of white wine, prosciutto, sage, and butter.

Beef Stir Fry [ Thai-influence ]

Ingredients: Angus Beef Sirloin hand-cut into strips, tamarind-Asian ingredients sauce.

Directions: Premium Angus Beef Sirloin hand-cut into strips; stir-fried with a complex Tamarind -Asian ingredients sauce.

Vegetarian Couscous Bowl [ Mediterranean -influence ]

Ingredients: couscous, bell pepper, zucchini, sweet potatoes, mushrooms, green onions, arugula, lemon, blue cheese, and rosemary vinaigrette.

Directions: Couscous layered with roasted bell pepper, zucchini, sweet potatoes, mushrooms, green onions, and arugula. Dressed in lemon, blue cheese, & rosemary vinaigrette.

Baba Ghanouj [ Lebanese-influence ]

Ingredients: eggplant, olive oil, tahini paste, lemon, garlic, and garlic.

Directions: Lebanese dip, similar in concept to Hummus. Large eggplants are cut transversely, rubbed with olive oil, placed flat side down on a sheet tray, and roasted till the flesh is tender.

Cool completely, then scoop the flesh out of the skin. Mash and mix with tahini paste, lemon juice, and garlic (either mashed cloves of garlic or garlic granules).
