Beast Patties, with Brandy Cream Sauce [ French- & Italian-influence ]

Ingredients: American Wagyu, elk, wild boar, bison, cream-onion-brandy sauce, butternut squash gnocchi.

Directions: We use patties made with equal parts of ground American Wagyu, elk, wild boar, and bison. The patties are par-baked, and simmered gently in a cream-onion-brandy sauce.

Butternut squash gnocchi is worth the effort ( I followed the tips and the mode of preparation provided by “Jim” on his website – tips that are important such as not to knead the mixture; to squeeze out the excess liquid in the squash though it is roasted and the like how Sip and Feast describe.

Chicken Croque Monsieur-style [ French-influence ]

Ingredients: Chicken, cheese, white wine, herbs, Ham prosciutto, puree of roasted tomato, spinach, chopped parsley, garlic, and lemon zest.

Directions: A Croque Monsieur is the ultimate French ham and cheese sandwich. With this in mind, I chose to replicate the concept of creating layers and came up with the idea of chicken croque monsieur. As our menu describes it, the chicken breast is sliced horizontally across to create thin “sheets of chicken”. The chicken is then marinated in white wine and herbs. When ready to put together, you pan-sear the chicken in butter-canola and set aside. You start creating layers between the chicken sheets, with prosciutto, a puree of roasted tomato, Muenster cheese, and a puree of spinach. Place on a greased sheet tray, top with gremolata (chopped parsley, garlic, and lemon zest,) and bake just enough to heat through and melt the cheese.

Stuffed Onions [ Syrian-influence ]

Ingredients: onion, zucchini, sweet potatoes, bell peppers, rice, chickpeas, tomato sauce, herbs, and spices.

Directions: Follow the “how to” cut an onion, boil it and get each layer to be mellow and used to make a football-shaped roll (Stuffed Onions Syrian recipes). Create a vegetarian filling of sautéed to soften finely diced zucchini, sweet potatoes, bell peppers, and rice mixed with roasted chickpeas with your choice of spices or herbs. Once rolls are made, place snug next to each other in a pot, top with tomato sauce and cook gently till done. The same concept can be applied by making a filling of rice and meat and a couple of spices of your choice, in a tomato sauce as well.
